Juicy grilled chicken thighs marinated in a vibrant, herbaceous chimichurri sauce for a flavorful meal.

Ingredients

  • 4 chicken thighs
  • 1 cup fresh parsley
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper in a blender to make chimichurri sauce.
  2. Marinate the chicken thighs in half of the chimichurri sauce for at least 30 minutes.
  3. Preheat the grill to medium-high heat (about 375°F).
  4. Grill chicken thighs for 6-7 minutes on each side until internal temperature reaches 165°F.
  5. Serve topped with the remaining chimichurri sauce.

Notes

Use room temperature chicken for better marination and flavor absorption. Leftovers can be stored in an airtight container for up to 3 days.
