- 4 chicken thighs
- 1 cup fresh parsley
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 4 cloves garlic
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- Combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper in a blender to make chimichurri sauce.
- Marinate the chicken thighs in half of the chimichurri sauce for at least 30 minutes.
- Preheat the grill to medium-high heat (about 375°F).
- Grill chicken thighs for 6-7 minutes on each side until internal temperature reaches 165°F.
- Serve topped with the remaining chimichurri sauce.
Notes
Use room temperature chicken for better marination and flavor absorption. Leftovers can be stored in an airtight container for up to 3 days.
