Delicious Greek Chicken Kabobs marinated in garlic, lemon, and oregano, grilled with vibrant vegetables for a taste of the Mediterranean.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 2 lbs chicken breast, cut into cubes
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Skewers (wooden or metal)
  • Vegetables for grilling (optional, e.g., bell peppers, onion, zucchini)

Instructions

  1. Whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper until well combined.
  2. Add chicken cubes to the marinade, mixing well to ensure each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
  4. Preheat the grill to medium-high heat, around 375°F.
  5. Thread the marinated chicken and any desired vegetables onto the skewers, ensuring not to overcrowd them.
  6. Grill the kabobs for about 10-15 minutes, turning occasionally every 2-3 minutes, until the chicken is cooked through (internal temperature should reach 165°F) and has nice grill marks.
  7. Serve on a platter and enjoy your delicious Greek Chicken Kabobs!

Notes

For the best flavor, marinate the chicken for longer—up to 4 hours or overnight if time allows. Keep an eye on the grill temperature to avoid overcooking the chicken.
