Instructions
- Whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper until well combined.
- Add chicken cubes to the marinade, mixing well to ensure each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
- Preheat the grill to medium-high heat, around 375°F.
- Thread the marinated chicken and any desired vegetables onto the skewers, ensuring not to overcrowd them.
- Grill the kabobs for about 10-15 minutes, turning occasionally every 2-3 minutes, until the chicken is cooked through (internal temperature should reach 165°F) and has nice grill marks.
