Grilled Chicken Stuffed with Cheese and Peppers

A flavorful main dish of juicy grilled chicken breasts stuffed with melted cheese and colorful bell peppers.

  • 2 boneless, skinless chicken breasts
  • 1 cup cheese (such as mozzarella or cheddar), shredded
  • 1 cup bell peppers, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Instructions

  1. Preheat the grill to medium-high heat (around 375°F).
  2. Combine the shredded cheese and diced bell peppers in a mixing bowl until well mixed.
  3. Cut a pocket carefully into the side of each chicken breast. Stuff each pocket generously with the cheese and pepper mixture.
  4. Secure the openings of the chicken breasts using toothpicks or tie them closed with kitchen twine.
  5. Rub the outside of each chicken breast with olive oil and season with garlic powder, onion powder, salt, and pepper.
  6. Place the stuffed chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F.
  7. Remove the chicken from the grill, let it rest for a few minutes to allow the juices to redistribute, and then serve.

Notes

For a spicier kick, add jalapeños or cayenne to the stuffing. Great served with a side salad or garlic bread.
