- 2 boneless, skinless chicken breasts
- 1 cup cheese (such as mozzarella or cheddar), shredded
- 1 cup bell peppers, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Toothpicks or kitchen twine
Instructions
- Preheat the grill to medium-high heat (around 375°F).
- Combine the shredded cheese and diced bell peppers in a mixing bowl until well mixed.
- Cut a pocket carefully into the side of each chicken breast. Stuff each pocket generously with the cheese and pepper mixture.
- Secure the openings of the chicken breasts using toothpicks or tie them closed with kitchen twine.
- Rub the outside of each chicken breast with olive oil and season with garlic powder, onion powder, salt, and pepper.
- Place the stuffed chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F.
- Remove the chicken from the grill, let it rest for a few minutes to allow the juices to redistribute, and then serve.
Notes
For a spicier kick, add jalapeños or cayenne to the stuffing. Great served with a side salad or garlic bread.
