Juicy Hawaiian chicken kebabs featuring marinated chicken, fresh pineapple, and vibrant vegetables, perfect for summer barbecues.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 2 chicken breasts, cubed
  • 1 cup pineapple chunks
  • 1 onion, cut into wedges
  • 1 bell pepper, cut into squares
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together soy sauce, honey, olive oil, garlic, ginger, salt, and pepper to create the marinade. Whisk until well combined, ensuring the honey dissolves completely.
  2. Add the cubed chicken to the marinade. Cover the bowl and refrigerate for at least 30 minutes.
  3. Preheat your grill or grill pan over medium heat (around 375°F).
  4. Thread the marinated chicken along with pineapple, onion, and bell pepper onto skewers, alternating ingredients.
  5. Grill the kebabs for 10-15 minutes, turning occasionally until the chicken is cooked through and no longer pink.
  6. Serve hot and enjoy the delightful taste!

Notes

For best flavor, marinate overnight. Can substitute chicken with shrimp or tofu for dietary preferences.
