Ingredients
Scale
- 2 pounds chicken breasts or thighs
- 1 cup BBQ sauce
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Sandwich buns (for serving)
Instructions
- Season the chicken: Generously season the chicken breasts or thighs with garlic powder, onion powder, salt, and pepper.
- Sauté the chicken: Set your Instant Pot to sauté mode and add olive oil. Once hot, place the seasoned chicken in the pot and sear for about 3-4 minutes on each side, until golden brown.
- Add liquids: Pour in the chicken broth and BBQ sauce, ensuring the chicken is well-coated.
- Seal and cook: Close the Instant Pot lid with the vent set to sealing and cook on manual high pressure for 10 minutes.
- Release pressure: Allow for a natural release for 5 minutes, then carefully perform a quick release.
- Shred the chicken: After releasing pressure, open the lid and shred the chicken in the pot, mixing it with the BBQ sauce.
- Serve: Spoon the BBQ chicken onto sandwich buns, adding extra BBQ sauce if desired.
Notes
For deeper flavor, marinate chicken overnight. This recipe is versatile; feel free to serve it with coleslaw or other sides.
