Quick and flavorful BBQ chicken made in an Instant Pot, perfect for weeknight dinners or gatherings.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 2 pounds chicken breasts or thighs
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Sandwich buns (for serving)

Instructions

  1. Season the chicken: Generously season the chicken breasts or thighs with garlic powder, onion powder, salt, and pepper.
  2. Sauté the chicken: Set your Instant Pot to sauté mode and add olive oil. Once hot, place the seasoned chicken in the pot and sear for about 3-4 minutes on each side, until golden brown.
  3. Add liquids: Pour in the chicken broth and BBQ sauce, ensuring the chicken is well-coated.
  4. Seal and cook: Close the Instant Pot lid with the vent set to sealing and cook on manual high pressure for 10 minutes.
  5. Release pressure: Allow for a natural release for 5 minutes, then carefully perform a quick release.
  6. Shred the chicken: After releasing pressure, open the lid and shred the chicken in the pot, mixing it with the BBQ sauce.
  7. Serve: Spoon the BBQ chicken onto sandwich buns, adding extra BBQ sauce if desired.

Notes

For deeper flavor, marinate chicken overnight. This recipe is versatile; feel free to serve it with coleslaw or other sides.
