- 2 cups shredded cooked chicken
- 1 cup BBQ sauce (sugar-free for keto)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cooked and crumbled bacon
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper, sautéing for about 5-7 minutes.
- Combine shredded chicken, BBQ sauce, sautéed vegetables, and half of the cheese in a large bowl. Mix well.
- Transfer the mixture to a greased casserole dish, spreading it out evenly.
- Top with remaining cheese and crumbled bacon.
- Bake for 20-25 minutes or until cheese is bubbly and golden.
- Serve hot and enjoy!
Notes
For a spicy kick, substitute BBQ sauce with buffalo sauce or use different types of cheeses for variety.
