  • 2 chicken breasts
  • 1 cup basil pesto
  • Parmesan cheese, grated
  • Salt and pepper
  • Olive oil
  • Cherry tomatoes, halved (optional)
  • Pine nuts (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente, typically around 8-10 minutes, then drain and set aside.
  2. Meanwhile, season the chicken breasts generously with salt and pepper. Heat a splash of olive oil in a grill pan over medium-high heat until shimmering.
  3. Grill the chicken for about 6-7 minutes on each side or until it’s cooked through and has lovely grill marks. Once done, let the chicken rest for a few minutes before slicing it into strips.
  4. In a large bowl, combine the cooked pasta, sliced chicken, and basil pesto. Toss gently until every strand is beautifully coated with the vibrant green sauce.
  5. Serve warmed, topped with grated Parmesan cheese. You may also add halved cherry tomatoes and a scatter of pine nuts for extra texture and flavor if desired.
