- 200g pasta (penne or spaghetti)
- 2 chicken breasts
- 1 cup basil pesto
- Parmesan cheese, grated
- Salt and pepper
- Olive oil
- Cherry tomatoes, halved (optional)

Instructions
- Cook the pasta according to package instructions until al dente, typically around 8-10 minutes, then drain and set aside.
- Meanwhile, season the chicken breasts generously with salt and pepper. Heat a splash of olive oil in a grill pan over medium-high heat until shimmering.
- Grill the chicken for about 6-7 minutes on each side or until it’s cooked through and has lovely grill marks. Once done, let the chicken rest for a few minutes before slicing it into strips.
- In a large bowl, combine the cooked pasta, sliced chicken, and basil pesto. Toss gently until every strand is beautifully coated with the vibrant green sauce.
- Serve warmed, topped with grated Parmesan cheese. You may also add halved cherry tomatoes and a scatter of pine nuts for extra texture and flavor if desired.
